For the love of eggplant

She’s Cookin’s  recipe for Eggplant Parmesan was chosen as a finalist in Zov’s (of Zov’s Bistro fame) eggplant recipe contest and the judging is today; so I’m busy making Eggplant Parmesan “My Way” just as soon as I finish this cup of java :-) Over the years, I fine-tuned the preparation of this dish to make it less heavy and lower in calories without sacrificing the robust flavor and cheesy deliciousness.

    This looks amazing! I hope it does well! I love eggplant Parmesan, and so does my husband, and I also try to make it a bit more healthy without sacrificing the flavor. Thank you for sharing such great pictures!

    Priscilla: it was DELISH!
    My eggplant parm usually turns out like a choreboy soaked in axle grease. NO MORE! Way to go! You were terriffic at the contest. A great, easy going stage presence.

    Kelly, I am ecstatic that you actually went home and tried my recipe! Thanks for letting me know the results. I’m so glad you were one of the bloggers invited – I knew practically everyone in the room – it would have appeared “fixed” if I had won ;)
