My eggplants look almost exactly like yours...can't wait to pick and try your dip - reminds me of one of the dishes we tried at ZOVs Battle of the Eggplant.

Priscilla...please forgive my 'faux pas' of calling you by another endearing name of Patricia. I must have been incredibly absent minded for that split second.
Thanks for understanding.

Ciao for now,
Claudia

Patricia...you are no more a huge fan of eggplant than I am ;o)

Did you ever have a chance to find 'Sicilian' eggplants?
They are fabulous...no need to sweat them either.
I discovered them only a few years ago by fluke.
They are now starting to carry them at the market.

If you find and try them...let me know ;o)

What a yummy looking spread. I love eggplants and as you mentioned, one of my favorite ways to prepare them is by using a simple marinade and grilling them.

I didn't know that eggplant is a fruit, though. Thanks for the lesson. :-)

I adore eggplant too, but I didn't know it was a fruit! Great fact about one of my favorite "vegetables". This spread looks wonderful. I would love to pair it with some freshly made pitas or flatbread. Thanks for sharing!
