The Bee's Knees is a honey-sweetened Prohibition-era cocktail that's simple, clean and refreshing—the perfect drink to usher in Spring.
Serves: 1 cocktail
Ingredients
  • 2 ounces gin
  • 1 ounce fresh squeezed orange juice*
  • 1 ounce filtered water
  • ½ teaspoon honey, warmed
Instructions
  1. Heat ½ teaspoon of honey in an ounce of water in the microwave for 20 seconds.
  2. Fill a Boston Shaker half full of ice. Add the gin, orange juice, and honey simple syrup. Shake vigorously. Pour into a chilled martini glass. Garnish with a slice of orange peel.
Notes
To make a small batch of honey simple syrup: combine ½ cup water and ½ cup honey in a small saucepan, heat over medium heat, whisking constantly until honey is dissolved.

*Traditionally made with lemon juice, you can also use ½ ounce (1 tablespoon) fresh squeezed lemon juice and ½ ounce orange juice.
