Red is the color of passion, desire, and love.
To celebrate our 22nd Valentine’s Day I cooked a special red dinner for my sweetheart. I did this last night because he had to work today and doesn’t usually get home until 7:00 p.m. Yes, most companies don’t close for Lincoln’s Birthday, which was Saturday, and why the Post Office, banks, and schools are closed today – not because it’s Valentine’s Day 🙂
Both these dishes sing Spring with fresh fruit flavors and a brightness that says, “Winter be gone!”. And both are from Melissa’s Everyday Cooking with Organic Produce cookbook, a collaboration between Melissa’s Produce and Orange County’s own award-winning food writer Cathy Thomas.
An elegant and velvety Frei Brothers Pinot Noir was the perfect pairing for this dinner bursting with fruit and berry flavors and the earthiness of roasted beets. For dessert, we enjoyed a bit of dark chocolate while we savor the last of our wine.
I’ll post the recipes for these two stunning dishes this week and tell you more about this fantastic cookbook (that’s also a comprehensive guide to making the most of every season’s organic bounty), and how I happened to luck into one just before Valentine’s Day. ♥

Oh I do love this salad recipe;-) It is just a beauty and if I was home I would run out to the market this very minute to get the ingredients. I keep thinking of red, red, red and beets and blood oranges, so delicious, thanks for sharing. I will look for the cookbook;-)
