This is the third in my series of asparagus recipes for spring – the first was a wonderfully Creamy Asparagus Soup<\/a> made with no dairy, the second was a simple Roasted Asparagus<\/a> with an array of suggested “toppings” , and now, Asparagus and Potato Frittata. Frittatas are such a versatile dish: you can use almost anything that might need using in the fridge, it’s a delicious way to prepare leftovers from Easter dinner, and perfect for a quick weeknight meal or a leisurely Sunday brunch at home.<\/p>\n
