Breakfast tacos are a quick and\u00a0healthy breakfast idea for anytime of year, but especially on weekends or in the summer when kids are at home and, hopefully, mornings are not as rushed as during the school year. Everyone, big and little, loves tacos and it’s no surprise that tacos have become as American as apple pie, pizza, and burgers. Taco Tuesday has even become a weeknight tradition for many families, but there’s no rule saying you can’t eat them for breakfast!<\/p>\n

Besides being nutritious, the best thing about breakfast tacos are how versatile they are – eggs and almost anything else you have on hand. The easiest breakfast tacos begin with an egg scramble and a variety of healthy, colorful vegetables. Breakfast tacos can include ground beef or turkey, ham, bacon, or sausage, but vegetarian ones are just as delicious. I used a little organic ground beef that I reserved after making burgers. Plus, eggs aren’t just for breakfast anymore, “brinner” is always a fun meal idea when you’re in a rut and great for camping trips as well.<\/p>\n

Eggs are one of nature’s most nutrient dense foods whose most nutritious component – the yolk – has been largely misunderstood and maligned because of their cholesterol content. Fortunately, for the egg, an oozing egg yolk is all the rage with “foodies” and adding a soft cooked egg on top of burgers, pizza, salads, and even fries, is no longer just a French thing.<\/p>\n

My interest in nutrition began surreptitiously as a child with daily chores and unavoidable seasonal tasks\u00a0that come with living on a few acres that is your family’s main food source. Then, as a teen reading groundbreaking (at the time) books such as “Diet for a Small Planet<\/em><\/a>” and experimenting with eating stuff like \u00a0brewer’s yeast and lecithin granules purchased from the local “hippie” health store. Later, as a college student I continued learning about health and nutrition through reading and nutrition classes related to my Home Economics teaching certification studies. Since I’m not an R.D. (registered dietician) offering nutritional advice online is never a good idea, but there is no shortage of reliable sources on the web to reference.<\/p>\n

Studies actually show that dietary cholesterol isn\u2019t something you need to worry about, because cholesterol in the diet doesn\u2019t raise the \u201cbad\u201d cholesterol in the blood.<\/em><\/p>\n

What we\u2019re left with is one of the most nutritious foods on the planet. Whole eggs are so nutritious that they\u2019re often referred to as \u201cnature\u2019s multivitamin.\u201d<\/em><\/p>\n

Egg yolks are loaded with vitamins, minerals and various powerful nutrients.<\/em><\/p>\n

They\u2019re high in Lutein and Zeaxanthine, antioxidants that can protect the eyes and reduce your risk of eye diseases like cataracts and macular degeneration.<\/em><\/p>\n

Eggs are also loaded with choline, a brain nutrient that about 90% of people aren\u2019t getting enough of.<\/em><\/p>\n

Eggs also contain high quality protein and healthy fats.<\/em><\/p>\n

Now, let’s get to that Sunday Scramble I was talking about. For us, Sundays are for sleeping in, for exercising and leisurely walks on the beach, for rejuvenating and regrouping to prepare for the week ahead. Sunday can be about going to church, for lounging by the pool, for hiking and biking and enjoying the great outdoors, for family suppers… Whatever Sunday holds for you, a Sunday Scramble is a one skillet meal that is delicious and nutritious and doesn’t take a lot of thought or effort.<\/p>\n

A Sunday Scramble includes eggs – all of it, none of this egg white only nonsense – and cage-free Happy Eggs<\/a>, preferably. Growing up, my siblings and I gathered eggs laid by a flock of Rhode Island Reds every morning, but if you don’t have a source for farm fresh eggs – buying eggs from cage free hens is the next best thing.<\/p>\n

      In a glass bowl or measuring cup, lightly whisk four eggs with a little milk and water. Add 1\/2 teaspoon of herb garlic spice.<\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t
    2. \n\t\t\t\t\t\t\t\t\t\t
      Heat a skillet over medium heat and cook the ground beef*. Remove and set aside. Add 1 tablespoon vegetable oil or butter. Add mushrooms, sprinkle with chile flakes and cook for five minutes, stirring, until lightly browned. Add the peppers and cook vegetables for another 3 minutes until softened, stirring occasionally. Stir in the ground beef and spinach.<\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t
