"Leatherby's

The Phantom of the Opera returns to Segerstrom Center with an acclaimed new Broadway production and Executive Chef Ross Pangilinan has prepared a suitably romantic dinner menu for the stage’s most dynamic protagonist.

Filled with drama and vibrant flavors of summer’s bounty, Phantom ticket holders are able to take the experience one step further with a beautifully executed pre-theater dinner at Leatherby’s Cafe Rouge.

The Broadway Series 2015/2016 season includes Broadway hits The Lion King, 42nd Street, If/Then, The Illusionists, Wicked, The Book of Mormon, Cinderella, and The Sound of Music – take a look at all Leatherby’s special show menus and see what deliciousness is in store for you.

The dessert shown above is one that will be prepared for the Nutcracker in December (December 10th-20th, 2015). Chef Pangilinan’s culinary artistry was evident throughout the media dinner held to give us a preview of what was deliciousness he has created for the 2015/2016 Broadway series dinners.

A glass of bubbly served as a celebratory accompaniment to the first course which guests of Cafe Rouge will enjoy on the special Phantom menu. The lightly cured cobia with ginger and daikon accented by shaved white asparagus and paper-thin nori was a play on black and white with a lovely zen aesthetic.

"Leatherby's

The second course of the tasting menu was an extraordinary caramelized salmon deviled egg with salmon caviar, crispy chicken skin, and pickled mustard seeds that Chef has named “The Circle of Life” after the beloved song from The Lion King, coming to Segerstrom Center from October 6th – November 1st, 2015.

"Leatherby's

For the classic 42nd Street in November (10th – 22nd), chef created a dish entitled “Philadelphia” – a stunning twist on famous Philly cheesesteaks with braised oxtail, house made Cheese Whiz, and caramelized onions and peppers on top of fries which seemed more like a poutine to me, but I’m not objecting.

"Leatherby'sVivid color and a beautiful interplay of textures comes together in house made Veal Ravioli with sweetbreads, bacon, Cipollini onions, and mushrooms in a hunter’s sauce – the epitome of high-style comfort food. I’m definitely returning for this dish which will make an appearance for Wicked beginning February 16th – March 6th, 2016.
