Ingredients
2cupscauliflowerfinely chopped
1/2cupwater
1tablespoonunsalted butter
1/8teaspoonWhite Sarawak pepper
1/2cupgoat cheese crumbles
1grilled or roasted Hatch chileminced (about 1 tablespoon) - optional
Instructions
Heat the cauliflower, water, and butter in a 3 qt. saucepan over medium low heat. Cover and cook about 15 minutes until softened. Add the pepper, goat cheese, and chile. Mix well.
Recipe Notes
Anaheim chiles can be substituted for the Hatch chiles. While cheddar or other sharp cheese is often used, goat cheese has much less sodium - 105 mg. per serving.If you’re not on a low sodium diet, feel free to use a sharper cheese.
