Corn-Jalapeño Fritters

If you've never met a fritter, you didn't like - you'll love this one! Recipe from Bon Appétit.
Servings: 8 fritters
  • 2 eggs lightly beaten
  • 1/4 cup all-purpose flour
  • 2 tablespoons grated parmesan cheese*
  • 1/2 teaspoon kosher salt
  • 2 cups fresh corn kernels
  • 1 green onion thinly sliced
  • 1/2 jalapeño seeded, finely chopped
  • Garnish: 1 lime cut into wedges, 1/2 cup sour cream
  1. Pulse eggs, flour, Parmesan, and ½ tsp. kosher salt in a food processor to combine. Add corn, scallion, and jalapeño; pulse 2–3 times.
  2. Heat oil in a large nonstick skillet over medium heat. Working in batches, cook heaping tablespoonfuls of batter until golden brown, about 4 minutes per side; season fritters with salt. Serve with sour cream and lime wedges.
Recipe Notes

* Changes I made to the recipe: You can char the jalapeño over a gas burner, then place in a baggie to steam, remove the skin and seeds, then dice. I also used grilled corn and substituted Comté cheese - a French Gruyere cheese that is lower in sodium than parmesan and has a rich buttery flavor.
