Ingredients
3tablespoonslemon juice
1tablespoonGourmet Garden Parsley
1tablespoonGourmet Garden Cilantro
5tablespoonsolive oil
18 oz. package pearl couscous (also known as Israeli couscous)
25 oz. packages baby greens, spinach or kale
1/2cuptoasted pine nuts
4ouncescrumbled goat cheese, feta, or vegan cheese
2green onionsthinly sliced
1/2cupdried cranberries or cherries
Instructions
Combine lemon juice, Gourmet Gardens Cilantro and Gourmet Gardens Parsley in a large bowl. Whisk in olive oil until well mixed.
Make couscous according to package directions. When cooked, stir into dressing. Add greens so they wilt slightly from the heat of the couscous. Add remaining ingredients. Stir to combine.
