*Ras el Hanout Ras is a spice mix from North Africa. The name in Arabic means "head of the shop," and literally refers to the best spices the store has to offer.
Each shop or company has their own unique secret blend, but a typical Ras el Hanout contains a mixture of cardamom, clove, cinnamon, coriander, cumin, paprika, mace, nutmeg, peppercorn and turmeric.It plays a similar role in North African cuisine and Moroccan cuisine as garam masala does in Indian cuisine. You can purchase it at Middle Eastern markets or well-stocked grocers.
