  • 4 eggs preferably cage free
  • 1 tablespoon 1% milk
  • 2 tablespoons water
  • 1/2 teaspoon of herb garlic seasoning
  • 4 baby sweet peppers sliced
  • 2 ounces brown mushrooms sliced
  • 1 tablespoon butter or vegetable oil
  • Red chile flakes optional
  • 1/2 pound cooked organic ground beef crumbles optional
  • 1 cup fresh baby spinach
  • 4 corn tortillas
  • 1/2 avocado
  1. In a glass bowl or measuring cup, lightly whisk four eggs with a little milk and water. Add 1/2 teaspoon of herb garlic spice.
  2. Heat a skillet over medium heat and cook the ground beef*. Remove and set aside. Add 1 tablespoon vegetable oil or butter. Add mushrooms, sprinkle with chile flakes and cook for five minutes, stirring, until lightly browned. Add the peppers and cook vegetables for another 3 minutes until softened, stirring occasionally. Stir in the ground beef and spinach.
  3. Add the egg mixture, stir the mixture to cook the eggs evenly, about 5 minutes.
