Crepes with Cocoa Bean Infused Maple Syrup and Sliced Bananas
Runamok's new Cocoa Bean Infused Maple Syrup is excellent anywhere you like chocolate syrup! Try this scrumptious easy preparation for crepes with bananas for an easy, elegant breakfast or dessert.
- 1 cup flour
- 2 large eggs
- 2 egg yolks
- ½ cup milk
- ½ cup water
- 3 Tbsp melted butter
- 2 Tbsp rum or bourbon
- 2 Tbsp sugar
- pinch of salt
- 2-3 ripe bananas
- Runamok Cocoa Infused Maple Syrup

Combine all ingredients in a bowl and let rest for 10 minutes. Heat an 8' stainless steel or non-stick skillet over medium-high heat. Add a pat of butter and swirl to cover the bottom of the pan. Add 1/4 cup crepe batter to the pan and immediately swirl it around so the batter coats the bottom of the pan evenly. Cook for about 45 seconds or until the underside starts to brown. Flip the crepe and cook the underside until golden brown. Transfer to a plate.

When you have a stack of finished crepes, wrap them in foil and keep warm in a 200° oven. When you are ready to serve, place a spoonful of thinly sliced bananas in the middle of a crepe and gently roll to enclose. Place 2-3 rolled crepes on a plate and drizzle with Runamok Cocoa Infused Maple Syrup. Serve immediately.
